FSIS Publishes Q&As On RTE Product Information

USDA's Food Safety and Inspection Service (FSIS) has posted a Questions and Answers document (Q&A) to provide additional guidance to plants regarding the Production Information required on Post-Lethality Exposed Ready-to-Eat Products (Form 10,240-1) affecting establishments that produce Ready-to-Eat products.

This Q&A supplements Regulation 9 CFR 430.4(d), which states that "...an establishment that produces post-lethality exposed product shall provide FSIS...with estimates of annual production volume and related information for the types of meat and poultry products processed..." in accordance with that section of the regulation.

FSIS says that the Q&A posted on its website will be updated weekly, as necessary, to answer questions received by the Technical Service Center and by the Office of Policy, Program and Employee Development.  The Q&As are available at:
