Pre-Convention
Workshop |
| |

|
"Meeting
the Regulations to Control Listeria in Ready-To-Eat
Meat Products" was the topic for the pre-convention
workshop. The workshop was held at the Michigan
State University Meat Laboratory andcovered such topics
as basic
meat microbiology, the new Listeria regulation,
use
of antimicrobials, and improving sanitation
through facility design and maintenance. |

AAMP
Board Meeting |
|
|
The
AAMP Board of Directors
met on Wednesday from 9:00 am - 5:00 pm. A variety
of topics were discussed, including AAMP's financial
status, future AAMP convention locations, AAMP's website
development, as well as the development of the remaining
property located behind the AAMP headquarters in Elizabethtown,
PA. |

President's
Reception |
| |
 |
|
The
president's reception was held in the President
Ford Room of the Amway Grand Plaza on Wednesday
evening. The event was well-attended and gave
AAMP members an opportunity to make new acquaintances
and reunite with old friends and colleagues in the
meat industry.

Welcoming
Session |
|
|
AAMP
members filled the room for the welcoming session
to officially begin the convention. AAMP President,
Hugh Tyler, welcomed everyone to the 65th Convention
of Meat Processors & Suppliers Thursday morning.
The F.W. Witt Supplier
of the Year Award and the Outstanding
Service Award were presented during this session. |

Witt Supplier of the Year Award
The
recipient of the 2004 F.W. Witt Supplier of
the Year Award was KOCH Equipment from Kansas
City, MO. |

|
Outstanding
Service Award
The
recipient of the 2004 Outstanding Service Award
went to Bob and Judy Fibrandt of New Haven, Michigan.
While they both operate Bob's Processing Inc.,
Judy also serves as the Michigan Meat Association
Executive Director. They both dedicated numerous
hours to this year's AAMP convention to make it
a success.

Update |

USDA/FSIS
Acting Administrator Barbara Masters spoke to a large
group of AAMP members addressing such issues as the
decrease in the amount of foodbourne pathogens being
detected, as well as the level of foodbourne illness
being caused by those pathogens. Masters also
spoke of the necessity on better training and education
programs for FSIS personnel and outreach programs
for the meat industry. |

|
|
|
|
The
exhibit hall opened at 1:00 pm with a special ribbon-cutting
ceremony performed by Hugh Tyler. 126 suppliers exhibited
throughout the 3 day trade show. Other activities
such as a sharpest knife contest, packaging contest,
and a kid's deli competition were also scheduled in
the exhibit hall. |

Welcoming
Reception |
|
|
The
welcoming reception was held near Ah-Nab-Awen Park,
adjacent to Gerald R. Ford Museum. AAMP members
were welcomed by the Michigan Meat Association as
well as other surrounding state associations.
A traditional "fish boil" was prepared,
along with smoked chicken. The event gave members
an opportunity to unite and relax in the beautiful
Michigan weather. |

American
Cured Meat Championships |
|
|
|
|
Although
the 2004 American Cured Meat Championships began
on Thursday afternoon, products were evaluated throughout
the day on Friday by experienced judges from all
sectors of the meat industry. A total of 561
products were entered in 28 classes, including this
year's regional class of smoked fish.

First
Timers Reception |
|
|
A
first timers reception was held to welcome members
to their first AAMP convention. This gives
members an opportunity to ask questions and talk
directly to the AAMP President, Executive Director,
as well as AAMP board members.

American
Cured Meat Championships Awards |
|
|
|
|
The
awards session began at 7:30 am. Award winners
that competed at the IFFA trade fair in Frankfurt
Germany were recognized prior to announcing the
ACMC awards. The Clarence
Knebel Best of Show Memorial Award went to The
Butcher Shop LLC from Fennimore, WI. The best-of-show
product was a Bone-In Ham (Heavyweight). For

Cured
Meats Hall of Fame Award |
|
|
The
2004 inductees to the Cured
Meats Hall of Fame were Roger L. Alewel and Randy
A. Alewel. Roger began working in the family
meat business, Alewel’s Country Meats, in 1964.
Alewel’s Country Meats is located in Warrensburg,
Missouri, which was started in 1932 by his father
Hugo and his Uncle Dick. In 1984, Randy assumed
management of Alewel’s Country Meats.
He continued the tradition of this business, producing
numerous types of meat products including: cooked
sausages, summer sausage, bacon, ham, jerky, country
ham and cured poultry. |

Single Booth Award
The
Best Single Booth
Award went to MAR/CO Sales Inc. MAR/CO Sales
is a supplier of casings located in Bloomington,
Minnesota. |

Multiple Booth Award
The
Best Multiple Booth
Award went to Excalibur
Seasoning Co. Ltd. Excalibur Seasoning is a
supplier of seasonings,
marinades, and spices located in Pekin, Illinois.

Kid's
Deli Tray Competition |
|
|
| |
|
This
was the first time the deli competition was held
at the AAMP convention. We had a large turnout
of children compete in the event, which was divided
into four age groups. Competitors were given
a designated amount of meat and cheese to design
their personalized deli tray.
Congratulations
to all of the winners, and we hope that everyone
had fun!

Banquet |
|
The
banquet was a casual meal that included the announcement
of the AAMP Achievement Award, AAMP's highest honor bestowed
on an AAMP member for continuing service to the meat industry.
The winners of the Sharpest Knife Contest and the Packaging
Contest were also announced. |

Achievement Award
The
recipient of the 2004 Achievement
Award was Thomas Dewig from Haubstadt, Indiana.
The award was presented by Steve Krut.

Sharpest Knife Contest Winner
The
winner of the sharpest
knife competition was Randy Garver of R
& B Meats from Green River, Wyoming. The
award was presented by Mark Schad.

The
Packaging Contest Winner
The
winner of the packaging
wrapping contest was Glenn Roberts of Glenn's
Market and Catering Inc. from Watertown, Wisconsin.
The
award was presented by Dennis and Kim Schaardt.

|
An
entertaining skit was performed by Murray Miller
and Andy Ryan featuring the "chickin-a-tor",
an affordable piece of meat processing equipment
that can be found in most everyone's home, the washing
machine.

Session |
|
|
Hugh
Tyler presented the past president Russ Wenzel with
a print of a Pennsylvania covered bridge as a token
of appreciation to the years of service on the AAMP
executive board.

Golden
Cleaver Award
The
AAMP Golden Cleaver
Trophy acknowledges the member who has recruited
the highest number of new members to the join the
American Association of Meat Processors. Russ
Wenzel presented the Golden Cleaver Award to Dr.
Joe Cordray for outstanding membership recruitment
on behalf of AAMP. Joe recruited seven new
members.

Tricks
of the Trade
Tricks
and Tips was created to acknowledge a member with
an idea that was implemented in their business to
improve the operation. Gary Crane served as
the moderator of the contest. The winner was
John Hamm from Madison, Wisconsin. John produces
a processing guide every deer season that helps
bring in new customers and gets his establishment
recognition in the community.

Next
AAMP President
Hugh
Tyler introduced Scott Cunningham as the next AAMP
president as he presented Scott with his red blazer
and president's pin. Scott operates Cunningham
Meats in Indiana, PA, and will serve as the AAMP
president until next year's convention in Buffalo.

Scott
Cunningham presented Hugh Tyler with a plaque and
thanked him for his year of service as AAMP president.
Hugh will remain on the Executive Board as immediate
past president for the next year.
|
|

|
|
Scott
introduced the newly elected board members, as well
as the directors that were staying on the board.

Outgoing
Board Members
Hugh
Tyler recognized the outgoing directors who completed
three years of service on the AAMP board.
The members going off the board were Mark Hartrich
(Region 1), Ron Nodine (Region 1), and Scott Steinman
(Supplier) (not pictured).

Closing
Speaker
The
closing session speaker was Damian Mason. Damian
left the audience laughing as well as gave them four
things to think about as they went home to operate
their businesses.

Grand Prize
Winner
Marla
Sklenarik, Miles, Texas, was the grand prize winner.
She won a trip for 2 persons to the 2005 American
Convention of Meat Processors in Buffalo, New York.
The trip includes air travel from a U.S. Gateway
departure city, five days' and four nights' accommodations
provided compliments of the Hyatt Regency/Adams
Mark Hotel, complimentary convention registration
and 2 tickets to the welcoming session and Saturday
night banquet.
