USDA's Food
Safety and Inspection Service will host a regulatory education
workshop July 28 in Peabody, Mass., for owners and operators
of small and very small plants.
The workshop will cover a variety of topics and prerequisite
programs, including hazard analysis and critical control
points (HACCP), sanitation performance standards, sanitation
standard operating procedures, rules of practice, food defense
strategies and E. coli O157:H7.
The session will be at the Springhill Suites - Boston Peabody,
in Peabody from 5:30 p.m. to 7:30 p.m. To register, click

Webinars
FSIS also announced six webinars through November to help
small and very small plants.
The first webinar, "Issues Regarding Effective Microbiological
Testing For E. Coli O157:H7 For Small And Very Small Plants,"
will be July 29. It will focus on developing microbiological
testing programs for small and very small processing plants.
FSIS testing will be discussed, as well as testing methods
for N-60 that meet USDA expectations and guidelines.
Mindy Brashears of Texas Tech University will lead the webinar,
which will be at 11 a.m. ET, 2 p.m. ET and 5 p.m. ET.
