AAMP Offers a Full Pre-Convention Workshop

All the activities will take place at the Charleston Area Convention Center.
The 84th American Convention of Meat Processors and Suppliers' Exposition is taking place on July 13-15 in Charleston, S.C. But if you get to Charleston a day earlier, on July 12, you can participate in the Pre-Convention Workshop, taking place from 9:00 AM – 4:00 PM. All the activities will take place at the Charleston Area Convention Center.

From 9:00 until 10:45 AM, AAMP will present a “Virtual Bus Tour,” featuring processor members from Alaska, Missouri and South Carolina. Grab a seat and listen to three processors from across the country “walk” you through their places of operation.

Next, FSIS leadership will be holding a National Small Plant Roundtable from 11:00 AM – 1:00 PM. The purpose of the roundtable will be for small establishment owners to hear important updates, and to share their thoughts, concerns, and suggestions directly with FSIS leadership from the District Office and Washington, D.C. This provides FSIS a chance to create positive changes by hearing directly from establishments.

This meeting will cover topics such as labeling approval, humane handling issues, the Food Safety Assessment process, and communications with the District Office, including applying for and updating the Grant of Inspection. Processors who are unable to attend the roundtable live can join virtually, and all attendees will be able to ask questions during the event. FSIS is requesting that attendees RSVP for the event if they plan to attend live or virtually.

Finally, from 1:00 – 4:00 PM, AAMP members will present “Profitable and Efficient Business Practices.” Learn from your peers the ins and outs of determining custom costing, making cost-effective products, and determining profitability of your products. This panel discussion will provide insight on working smarter, not harder. Louis Fantasma of Paradise Locker Meats (Trimble, Mo.), Dan Robert of Coastal Plains Meat Co. (Eunice, La.) and Allison Porteus of Boone's Butcher Shop (Bardstown, Ky.) and Kitchen Table Consultants will be speaking.

Participation in all three events is free for all registered attendees of the AAMP Convention. There is also an opportunity to pre-order a box lunch for the event.
