On-Farm Butcher w. On-the-Job Training Available

Wyebrook Farm is growing and looking to add a new member to our small team. We are a family-owned regenerative farm nestled in the hills of northern Chester County. Our team is committed to raising animals responsibly on our land and to providing our community with clean, top-quality meats through exceptional customer service. Care and respect for our land, animals, partners, each other and our community at large is fundamental to our work.

The ideal candidate will be enthusiastic about growing into a lead butcher position on a tightly-knit team. We’re seeking immediate assistance with packaging, value-added products (i.e. stock, tallow), and various other aspects of meat sales. The right person will possess a genuine interest in expanding their knowledge of whole-animal butchery and in taking on more responsibilities as our current Head Butcher transitions out. While existing whole-animal butchery skills will be met with enthusiasm, previous experience is not required to excel in this position. 

At minimum, moderate knife skills and general commercial kitchen familiarity are needed. The right person will have the opportunity to train in whole-animal butchery alongside our Head Butcher with the goal of assuming that role in the future.  

We are a hard-working and fun-loving crew. The farm is over 200 years old and sits along the East Branch of the Brandywine Creek. The rolling property features a restored farmhouse and Swiss Bank barn, and has mostly been in agricultural use since development. Today, much of the farm is under agricultural protection.

RESPONSIBILITIES: 

  • Maintain quality, production, and food safety standards in all tasks

  • Assist with meat processing, including but not limited to: grinding, mixing, sausage-making, trimming, and de-boning

  • Manage pre-order fulfillment in a thoughtful and timely manner (checking weekly orders, pulling items, packaging, coordinating with Operations Manager if communication with customer is necessary)

  • Assist with cooler/freezer inventory and organization, including but not limited to: proper labeling, weekly inventory reconciliation, cleanliness and overall organization

  • Clean equipment, work areas and tools/utensils to meet all health and sanitation standards

  • Practice food safety and temperature control procedures at all times

  • Process primals and sub-primals into individual cuts under the training/supervision of our Head Butcher as needed

  • Assist in tracking and fulfillment of wholesale and custom retail orders

  • Assist with the development and execution of value-added products

  • Participate in staff discussions as requested 

  • Understand our farming practices and operational policies, and accurately communicate those as a valuable representative of our farm business 

  • Manage at least one farmers market per week (packing, loading, vending, unloading, unpacking, reconciling inventory). Extensive knowledge of our cuts and basic cooking techniques, in addition to enthusiasm and outstanding customer service, will be expected.

SKILLS: 

  • Strong work ethic, ability to take direction, and be a collaborative member of a team

  • Punctual, organized, and respectful 

  • At minimum, moderate knife skills and ability to use and maintain knives and other cutting equipment safely 

  • Genuine interest in whole-animal butchery and a passion for supporting our local food system

  • Thoughtful approach to leading a small but busy team

  • Strong communication skills and desire to openly communicate with colleagues 

  • Ability to excel in a fast-paced environment with a sense of urgency, while maintaining quality and health/safety standards

  • Demonstrated commitment to exceptional customer service 

  • Ability to work at a brisk pace when needed, with consistent attention to detail 

  • Working knowledge of basic beef and pork cuts, and appropriate prep/cooking methods (we will train further)

  • Ability to thrive in both group and individual work settings 

  • ServSafe certification not required but is a plus

Requirements

PHYSICAL REQUIREMENTS/WORKING CONDITIONS: 

  • Must be able to safely lift 50+ lbs. 

  • Standing/walking up to 8 hours per day

  • Bending, twisting, squatting, and reaching 

  • Ability to safely handle knives and other cutting equipment

  • Exposure to temperatures: <32? (walk-in freezer), 32-40? (refrigerators), >90? (occasionally at outdoor events)

  • Hand use: single grasping, fine manipulation, pushing and pulling

IMPORTANT DETAILS: 

  • $18-25/hour commensurate with experience 

  • Standard holidays apply, but some weekend hours will be required

  • Full-time, 40 hours/week (days of week may be negotiable) 

  • Valid driver’s license and driving record free of major violations required
