Meat Lab Assistant Manager (Ag Tech 2)
Detailed Job Description:
Assists in the daily operations of the OSU Animal Sciences Meat Science Laboratory and serves as back-up to the lab manager; coordinates and performs routine maintenance and upkeep of the equipment and facility; coordinates purchasing for meat lab related expenses under the direction of the manager; submits, tracks, and finalizes all internal purchasing program related to items related to meat lab; Co-coordinates the sales of meat and meat products; serves as back-up for meat laboratory sales pick-up; assists with harvest, fabrication, and processing of products used in teaching, research, and extension; assists in training and overseeing 8-10 student employees; oversees the cleaning, sanitation and maintenance of all equipment and rooms covered by the inspection program; monitors and orders supplies needed for daily routine operation of laboratory in accordance with budget allocations.
Required to lift up-to 55lbs repeatedly; first aid certification must be received within 12 months of hire date; must have experience with HACCP and completing HACCP-related records and documentation, SSOP’s, GMP’s; must have experience and proficiency with harvest and fabrication of beef, pork, lamb, and goats; proficient in record keeping and documentation; successful completion of a background check.
Experience with poultry harvest and fabrication; experience with intercollegiate meats judging; experience with further processing and packaging of products; knowledge of meat formulation and labeling regulations; able to work independently; training in humane handling of livestock; ability to understand and convey verbal instructions.
Assist with the daily operations of the meat science laboratory as directed by the meat science laboratory manager; assists with all harvests, fabrications, and processing of products; coordinates all required purchasing and reconciliation under the direction of lab manager; coordinates the sales of laboratory products; serves as back-up for meat sales pick-up
Assist with maintaining meat laboratory equipment; provides regular repair and preventive maintenance; monitors the equipment performance; recommends and advises for equipment replacement and/or improvements; oversees all cleaning and sanitation of equipment and laboratory rooms; ensures inspection compliance; monitors and orders supplies as needed including first-aid; manages HACCP related records
